Whole Roasted Chicken

Serves 8

Roasting a while chicken will give you delicious homecooked meat for a small group or for yourself for a few days. Save the carcass from this and use to prepare your own bone broth, you’ll be so glad you did!

Prep Time: 10 minutes
Cooking Time: 60 minutes

Ingredients:

1 whole organic chicken (about 3 pounds), organ meats removed (if any)
4 tablespoons ghee or butter
2 teaspoons sea salt
1 teaspoon black pepper
4 garlic cloves, peeled & minced
Zest from ½ fresh lemon
1 cup fresh parsley, chopped

Instructions:

Preheat oven to 350 degrees Fahrenheit.

Place whole chicken in a roasting pan or a Dutch oven.

Cut butter in small pieces and rub all over chicken. Wash your hands after.

Sprinkle with sea salt and black pepper and minced garlic.

Roast in the oven, covered, until it is golden and its internal temperature reaches 165 degrees F.

To crisp the outside skin, allow to golden under the broiler, uncovered, for about 3 minutes, being careful to watch every minute or so to prevent burning.

Remove from the oven and serve between 8, storing any leftovers in a glass container for up to 3 days.
