Mummy Dogs

Serves 6

These spooky mummies will be much less frightening than all the carbs and sugar Halloween traditionally offers! Our grain-free Keto bread is soft and savory, keeping these mummies cozy on their platter, but more importantly, in your tummy!

Prep Time: 5 minutes
Baking Time: 15 minutes

Ingredients:
2 cups shredded pepper jack cheese
4 tablespoons plain cream cheese
2 large eggs
½ cup almond flour
¼ cup coconut flour
1 teaspoon baking powder
½ teaspoon xanthum gum
6 grass-fed beef hot dogs
12 candy eyeballs (optional)
Mayonnaise to “glue” eyeballs
Yellow or stoneground mustard

Instructions:

Preheat your oven to 400 degrees Fahrenheit.

Heat the shredded pepper jack cheese and cream cheese in a large skillet on the stove on low heat until melted.

Stir very well together (it will be a little tedious stirring it together but keep at it!) and remove from the heat.

Stir in whisked eggs quickly, followed by the almond flour, coconut flour, baking powder and xanthum gum, until a thick dough has formed.

Place dough in between two large pieces of parchment paper and either with a rolling pin or a tall glass, roll out into a 10x10” flat square. Using a paring knife, divide in 6 slices.

Carefully twist a slice of dough around each hot dog and place on a baking tray lined with parchment paper.

Bake in the oven until the dough is cooked through, 13-15 minutes, or until golden brown.

Remove from the oven and allow to cool for a few minutes before using a bit of mayonnaise to “glue” each eyeball onto your mummy dogs.

Serve between 4 with yellow or stoneground mustard, storing any leftovers in an airtight container in the fridge for up to 3 days.
