Key Lime Squares

Makes 15 squares

Sweet and crunchy, bright and refreshing, these key lime squares are the perfect treat for your next special occasion. These store well, too, so you can make them a few days in advance, but don’t be surprised if it’s hard to wait that long to enjoy!

Prep Time: 15 minutes
Cooking Time: 10 minutes plus 2 hours to chill

Ingredients:
Crust:
½ cup chopped & toasted pecans
½ cup almond meal
2 tablespoons (Any sugar free sweetener of your choice)
2 tablespoons butter
Pinch of sea salt
Key Lime Filling:
2 medium avocados, peeled and pitted
4 tablespoons (Any sugar free sweetener of your choice)
Pinch of sea salt
¼ cup fresh lime juice
Zest from 1 lime
1 teaspoon vanilla bean powder
Garnishes:
Fresh lime slices
Fresh mint sprigs


Instructions:

Preheat your oven to 350 degrees Fahrenheit.

Pulse all crust ingredients together in a food processor until it is crumbly and begins to stick together, like a grainy dough.

With your fingers, shape it into a rectangle on a baking sheet lined with parchment paper.

Bake in the oven for about 10 minutes, or until it is golden in color. Remove from the oven and allow to cool, completely.

While your crust is cooling, pulse all key lime filling ingredients in a food processor until very creamy.

When the crust has cooled, carefully spread the filling evenly over it, leaving about ½” as a border. When ready to serve, garnish with fresh lime slices and fresh mint and cut in squares.
Store any leftovers in the fridge for about a week.
