Keto Zucchini in Zesty Cilantro Sauce

There’s no better way to serve up in-season veggies than in a sauce filled with healthy fats and super tasty herbs and seasonings, like this recipe for Zucchini in Zesty Cilantro Sauce. This tastes amazing on its own, it’s also delicious served up in a scramble or on top of chicken or fish!

Ingredients:

Zucchini:
1 tablespoon coconut oil
4 medium zucchinis, ends removed & chopped
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon garlic powder
Zesty Cilantro Sauce:
2 tablespoons mayonnaise
2 tablespoons olive oil
1 tablespoon raw apple cider vinegar
2 cups baby spinach
½ cup fresh cilantro
5 fresh basil leaves
¼ cup sun-dried tomatoes, packed in olive oil

Instructions:

Heat coconut oil in a large skillet set to medium heat. Add chopped zucchini, sea salt, black pepper and garlic powder and stir well.

Reduce heat to low, stirring occasionally, until very soft, about 7-10 minutes.

While the zucchini is cooking, add mayonnaise, olive oil, apple cider vinegar, baby spinach, cilantro, basil, sun-dried tomatoes and lemon zest to a food processor or blender and pulse well until it is thick and creamy.

Pour into the zucchini and increase heat to medium and continue to sauté until bubbly, about 3-5 minutes.

Serve between 4, storing any leftovers in the fridge for up to one week.
