Keto Cheesy Tuna Melt

Serves 1

A simple tuna salad on melted slices of cheese is tasty and really easy to prepare. We baked these cheese slices but if you’re at the office, simply microwave on a plate lined with parchment paper to get the same effect.

Prep Time: 5 minutes
Cooking Time: 5-12 minutes

Ingredients:
½ of a 5-ounce can of wild-caught tuna
1 tablespoon mayonnaise
¼ cups celery, diced
1 tablespoon jarred caper berries
½ teaspoon sea salt
¼ teaspoon cracked black pepper
3 slices of sharp cheddar cheese
Optional jalapeño slices to garnish

Instructions:

Preheat your oven to 350 degrees Fahrenheit and place cheese slices on a baking tray lined with parchment paper until melted, about 5 minutes. Set aside and allow to cool.

While the cheese is melting, drain the tuna and place it in a bowl. Break it apart with a fork and mix in the mayonnaise, celery, capers, sea salt and pepper.

Place scoops of tuna on each melted and cooled cheese slice and serve on a plate, or if desired, return to the oven to heat the tuna, about 8 minutes.

Garnish with jalapeño slices, if using.
