Keto Almond Ginger Zoodles

Ingredients:
“Zoodles”
2 tablespoon coconut oil
4 medium zucchinis, grated into “noodles” or 2 cups of store-bought zucchini “noodles”
Almond Ginger Sauce:
2 tablespoons toasted sesame seed oil
4 tablespoons almond butter
2 tablespoons coconut aminos
Juice from ½ lime
2 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon dried red pepper flakes
1 teaspoon fresh ginger, peeled and minced
Garnish:
2 tablespoons almonds, chopped
¼ cup cilantro, chopped

Instructions:

Add coconut oil to a medium-sized stock pot and bring to medium heat.

Add zucchini “noodles” to the pot and sauté until soft, about 3-5 minutes.

While the zucchini is sautéing, whisk all sauce ingredients in a bowl and set aside.

When the zucchini is soft, drain the excess water from the pot and add the “noodles” to the sauce.

Gently toss until the zucchini is coated in the sauce.

Serve with chopped almonds and cilantro.
