Scrambled Eggs
Prep Time: 1 minute
Cooking Time: 3-5 minutes

Ingredients:
1 tablespoon ghee or butter
3 large eggs
Sprinkle of sea salt & black pepper

Instructions:

Crack eggs into a bowl and whisk well.

Heat a cast-iron skillet to medium heat and when hot, add ghee and swirl it around the entire pan.

Pour eggs into the skillet, season with sea salt and black pepper and scramble with a metal spatula until done to desired preference, about 3-5 minutes.

Serve immediately.

Crispy Fried Eggs
Prep Time: 1 minute
Cooking Time: 3-5 minutes

Ingredients:
1 teaspoon ghee or butter
2 large eggs
Sprinkle of sea salt & black pepper

Instructions:

Heat a cast-iron skillet to medium heat and when hot, add ghee and swirl it around the entire pan.

Crack eggs into the skillet and do not move at all until the whites are browned on the edges and the yolks are set and are not runny.

Season with sea salt and black pepper.

Serve immediately.

Soft Boiled Eggs
Prep Time: 1 minute
Cooking Time: 4 minutes in an electric pressure cooker

Ingredients:
3 large eggs
1 teaspoon ghee or butter
Sprinkle of sea salt & black pepper

Instructions:

Place steam basket in an electric pressure cooker and add 1 cup of water.

Place eggs on top of the basket and place the lid on with the steam valve sealed.

Set to Manual on Low Pressure and cook for 4 minutes. After 4 minutes, manually release the steam and using tongs, remove the eggs and run under cold water or place in an ice bath to cool.

Carefully peel and place in a bowl with ghee or butter melting over the eggs and seasoning with sea salt and black pepper.

Serve immediately.
