Deconstructed Meatloaf

Serves 4

Traditional meatloaf is even faster to bake when it’s deconstructed, such as in this recipe, topped with creamy cheese and caramelized onions. Buy grass-fed beef and organic cheese whenever possible.

Prep Time: 5 minutes
Cooking Time: 30 minutes

Ingredients:
Beef:
1 pound of grass-fed ground beef
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
¼ cup tomato paste
1 large egg
Onions:
2 tablespoons ghee or butter
½ yellow onion, peeled and sliced
1 teaspoon sea salt
½ teaspoon cracked black pepper
½ teaspoon garlic powder
1 tablespoon coconut aminos
Topping:
1 cup shredded cheddar cheese


Instructions:

Preheat oven to 400 degrees Fahrenheit.

With your hands, combine ground beef, sea salt, black pepper, garlic powder, tomato paste and egg in a bowl.

Place 4 large scoops of the beef mixture in an oven safe dish and bake in the oven until cooked through, about 30 minutes.

Heat ghee or butter in a skillet on the stove set to medium-low heat.

Sauté onions in the skillet with sea salt, black pepper, garlic powder and coconut aminos until soft and caramelized, about 20 minutes.

When the “meatloaf” is done, remove from the oven, topping with shredded cheese and sautéed onions, deconstructing with a spatula to gently toss everything together.
