Cottage Cheese Egg Bake

This dish is a creamy and filling bowl of comfort, perfect for days when you are staying in. Most of these ingredients are probably already in your kitchen, so whip this up to see how easy it is to create a homecooked casserole that you can enjoy with loved ones, or on your own over a few different meal times.

Prep Time: 5 minutes
Cooking Time: 30 minutes

Ingredients:

2 tablespoons butter or ghee
1 cup marinara sauce
1 cup frozen spinach
½ cup 2% cottage cheese
1 teaspoon sea salt
½ teaspoon black pepper
Pinch of ground nutmeg

Instructions:

Preheat your oven to 350 degrees Fahrenheit.

Grease an oven-proof baking dish with butter and set aside.

Add butter to a sauté pan and bring to medium-low heat.

Add marinara sauce and frozen spinach and stir together until heated through, about 5 minutes.

Turn off the heat and stir in cottage cheese, sea salt, black pepper and ground nutmeg.

Pour into the baking dish and crack eggs into the dish, swirling with a spoon so that the egg whites get mixed into the marinara mixture.

Bake until the eggs have set, about 25 minutes.

Store any leftovers in the fridge for up to 3 days.
