Chicken Cordon Bleu Casserole

Is nothing more comforting than chicken cordon bleu? We turned this classic dish into a nourishing casserole that can be easily prepped for dinner any night of the week. To speed this up, you can use a pre-cooked rotisserie chicken from your market.

Prep Time: 15 minutes
Cooking Time: 35-40 minutes

Ingredients:
3 cups of shredded cooked chicken thighs
6 slices of ham, chopped in small pieces
4 tablespoons butter, melted
6 ounces plain cream cheese
1 tablespoon stoneground Dijon mustard
1 tablespoon white wine vinegar
1 teaspoon sea salt
½ teaspoon black pepper
6 1-ounce slices of Swiss cheese

Instructions:

Preheat oven to 350 degrees Fahrenheit.

Layer chicken on the bottom of an 8x8” baking pan. Layer ham on top of chicken.

Mix melted butter, cream cheese, Dijon mustard, white wine vinegar, sea salt and black pepper in a bowl until well-combined. Pour over the chicken and ham.

Layer sliced Swiss cheese on top of everything. Bake for 35 minutes or until everything is hot and bubbly.

Turn on your oven’s broiler and allow the cheese to turn golden for 2 minutes, being careful that it does not burn.

Remove from the oven and serve between 4, storing any leftovers in a glass container for up to 3 days.
