Burgers Wrapped in Swiss Chard with Zucchini Salad & Fruit Kabobs

Serves 4

 You have never had a burger until you have had a burger wrapped in swiss chard, the flavor is intense so pairing it with the zucchini salad and fruit kabobs is a perfect balance!

 

Prep Time: 10 minutes to prep Swiss chard leaves

Cooking Time: 20 minutes 

 

Ingredients:

 

Burgers

 1 bunch of Swiss chard

1 pound of grass-fed ground beef

1 tsp. sea salt

½ tsp. black pepper

½ tsp. garlic powder

1 tsp. dried red pepper flakes

2 tsp. dried mushroom powder

 

Zucchini Salad

 4 medium zucchinis

2 Tbs. olive oil

1 tsp. sea salt

½ tsp. black pepper

½ tsp. garlic powder

1 avocado

½ Tsp. dried red pepper flakes

Juice from a ½ medium lemon

 

Fruit Kabobs

Strawberries

Blueberries

Raspberries

 

Instructions:

 Fill a large pot with a few cups of water and bring to a simmer.  Holding one stem at a time, dip each Swiss chard leaf in the hot water until the entire leaf gets wet, then transfer to a plate.  Once cool, remove the tough stems with a knife and discard. 

 Mix all burger ingredients together in a large bowl and form 4 patties with your hands.  Place on a plate until ready to grill.

 Rinse and slice zucchinis in half and coat in olive oil, sea salt, pepper, and garlic powder.

 Fire up your grill to high heat and place patties and zucchini slices on the rack when the grill is very hot.

 Grill everything for about 3-4 minutes per side.

 While the meat and zucchini are cooking, slice strawberries in half and thread with the blueberries and raspberries on kabob sticks, or toothpicks.

 When the meat is done, wrap in 1-2 Swiss chard leaves and serve with your favorite burger toppings, such as mayonnaise, mustard, avocado or bacon.

 When the zucchini is done, transfer to a cutting board and chop in bite-sized pieces, tossing with a diced avocado and dried red pepper flakes.

 Serve your burgers, zucchini salad and fruit kabobs on a plate.
