Apple Cider Pork Chops

Serves 4

We added apples and spices to these pork chops to make them extra delicious. Make these while its apple season and experiment with different apple varieties!

Cooking Time: 25 minutes

Ingredients:
2 tablespoons avocado oil
1 tablespoon balsamic vinegar
1 teaspoon sea salt
½ teaspoon black pepper
3 garlic cloves, peeled & minced
2 Granny Smith apples, diced
1 small yellow onion, peeled & chopped
1 teaspoon pumpkin pie spice
1 pounds of boneless pork chops
2 tablespoons of ghee
½ cup chicken stock
Fresh parsley, to garnish

Instructions:

Add avocado oil, balsamic vinegar, sea salt, black pepper, pumpkin pie spice, garlic cloves, diced apple and chopped onion to a large bowl and toss very well.

Add in pork chops and toss with everything until it is coated in the marinade.

Add ghee to a large pot and bring to medium heat.

Using tongs, grab the pork chops from the bowl and sear for 2 minutes per side.

Reduce heat to low and pour in the remaining apple mixture and the chicken stock.

Cover and allow to simmer until the apples have cooked down, about 15 minutes.

Serve pork chops over the apple and onion mixture with optional minced parsley.
